Cooking with Courtney: Apple and Sour Cherry Crumble

Gluten Free Apple and Sour Cherry Crumble

(Serves 8-10)

Crumble mixture:

1 ½ cups Coles gluten free plain flour

150g chilled butter, chopped

1/3 cup firmly packed brown sugar

¼ cup Coles quinoa flakes

¼ cup shredded coconut

Pinch sea salt flakes 

3 x 800g (Ardmona brand) cans apple pie

1 x 680g jar Morello cherries (Always Fresh brand), drained

1 teaspoon ground cinnamon

¼ cup caster sugar

Icing sugar to serve

Thickened cream to serve

Method: 

1. Pre heat oven to 180 degrees.

2. Place the gluten free flour and butter into a large bowl. Using clean hands, rub the butter into the flour with fingertips until the mixture resembles coarse sand. Gently fold through the sugar, quinoa flakes, coconut and salt until combined.

3. Place the Apple pie filing into a baking dish, top with the cherries and sprinkle with sugar and cinnamon. Scatter the crumble mixture evenly over the top of the apple mixture, place in the oven and bake for 45-60 minutes, or until the crumble is golden.

4. Remove from the oven and serve with cream and a dusting of icing sugar. Enjoy!
